The flavor from mixing avocado and strawberries is refreshing in this quick to make salad.
In the world of salads this one in particular is delicious any time of the year, but I usually make it during the summer when the bins at the grocery are overflowing with strawberries and avocados.
Then adding in the diced red onion for a bit of bite and sunflower seeds for some protein and nut flavor really makes this salad pop. Finally the fresh mint and, wait for it…Roquefort cheese put this one over the top in the great taste category.
The fact that you get to add Roquefort cheese to anything is just super exciting, as I love the taste, but in this salad it works very well.
On a side note, did you know that Roquefort cheese is blue cheese just from a specific region of France. It has something to do with the goats and what or where they eat. It’s supposed to give the cheese a very specific flavor. I buy it. So that means Roquefort is blue cheese but all blue cheese is not Roquefort. Who knew.
When cutting the strawberries and avocado make them pretty chunky not all minced up. I find having bigger veggie and fruit pieces in the salad give a better texture. Plus if the avocado is super ripe then it doesn’t turn into a paste.
Once you get all the ingredients chopped, including the Roquefort and fresh mint yum, add in the sunflower and then add the vinaigrette dressing to finish it off.
