The flavor from mixing avocado and strawberries is refreshing in this quick to make salad.
In the world of salads this one in particular is delicious any time of the year, but I usually make it during the summer when the bins at the grocery are overflowing with strawberries and avocados.
Then adding in the diced red onion for a bit of bite and sunflower seeds for some protein and nut flavor really makes this salad pop. Finally the fresh mint and, wait for it…Roquefort cheese put this one over the top in the great taste category.
The fact that you get to add Roquefort cheese to anything is just super exciting, as I love the taste, but in this salad it works very well.
On a side note, did you know that Roquefort cheese is blue cheese just from a specific region of France. It has something to do with the goats and what or where they eat. It’s supposed to give the cheese a very specific flavor. I buy it. So that means Roquefort is blue cheese but all blue cheese is not Roquefort. Who knew.
When cutting the strawberries and avocado make them pretty chunky not all minced up. I find having bigger veggie and fruit pieces in the salad give a better texture. Plus if the avocado is super ripe then it doesn’t turn into a paste.
Once you get all the ingredients chopped, including the Roquefort and fresh mint yum, add in the sunflower and then add the vinaigrette dressing to finish it off.
Here’s the full recipe and instructions plus a quick video recipe to follow along. If you try the recipe let me know how it turned out or any suggestions you have. Thanks, Delicious Eric.

Description
Quick to make strawberry avocado salad with mint, blue cheese(Roquefort) and sesame seeds.
Ingredients
Strawberry Avocado Salad
- 2 cups of lettuce (7-8 leaves) cut
- 1/4 avocado diced
- 1/4 red onion
- 2 ounces Roquefort cheese
- 7 strawberries
- 2 table-spoons sesame seeds
- Vinaigrette dressing
Instructions
- Rinse lettuce and then chop into 1-2″ pieces. Cutting at 30 and 60 degree angles give the lettuce a better texture.
- Place lettuce in large salad bowl.
- Dice in larger chunks, strawberries, onion and avocado place in bowl on top of lettuce.
- Dice pretty fine the Roquefort cheese, place in salad bowl.
- Sprinkle sesame seeds over salad.
- Add vinaigrette and lightly mix salad.
Notes
You can substitute regular blue cheese for Roquefort cheese if you wish.
It helps to not put vinaigrette or mix until you are ready to serve the salad. Place unmixed salad in refrigerator to crisp until you are ready to serve.
