A simple and quick meal packed with flavour. Ideal for lunch or dinner.
The flavour of the soup comes from the pork and leek. It surprises me how flavourful this soup is with so few ingredients. With only six ingredients who knew something so simple will taste so good.
I can usually get this meal made in under 15 minutes from start to finish. We usually eat it for lunch when we get home from an errand, are starving, and want something on the table fast. it works well in winter as well as hot summer.
A couple of key things to make this soup. First the noodles, they only need to boil about 3 minutes, then rinse them and place them in a bowl with cold water to stop them from cooking. You want them a little under cooked so that when you place them in the bowl for serving and pour boiling broth over them they don’t turn to mush, rather they warm up but are firm.
Slice the veggies, all two of them, thin. Like paper. They will cook quicker, which is what you want, but also they will wrap around the pork slices nicely and there will be more pieces in the soup for eating, while they absorb the broth.
Third don’t over-cook the pork and veggies when you first put then in the pan. The tendency i to let it cook “a little longer”. Nope don’t do it, just 3 minutes on medium high heat then add the sauces and water. Put it back on medium heat until it begins to boil and you are done. Cook no more. Really that’s all you need.
If you cook the meat too long it will turn out tough and stringy, which is not a desirable result. So cook just enough, more is not better in this case.
Of course as with anything asian inspired I always recommend serving with chop sticks to add to the fun of eating. Plus it let’s you have a slurping contest with others at the table as you drink the broth.
When it’s all set and ready to go, enjoy. To make it look fancy adding in some quick garnish such as green onion makes it look even more fancy.
