A very simple and quick to make vegetable salad with olive oil and vinegar.
This recipe is so fast don’t blink while making it, well you can blink if you wish, but you probably won’t need to it’s so quick to make. When you are looking for some inspiration of what to add as a side dish to a lunch or dinner this is a great break from “green salad”. You also will think “really that’s it”.
There is not a lot going on in this recipe, rather that’s part of the beauty. You can make this in a few minutes and have something that is tasty and a bit different from the usual.
One item to consider is make this with good tasting either home-grown or organic vegetables to give the salad a little extra flavor, but it works well with regular store-bought vegetables.
Start by slicing a cucumber into long strips, kind of like toothpicks. It gives the vegetable a different texture than if it’s cut into rounds. Next cut a tomato into wedges, making the wedges thinner than normal so you end up getting 6-8 wedges from a medium-sized tomato.
Then chop a carrot into long strips just like the cucumber. Again this cut gives a different texture to the salad. You can peel the carrot if you wish, but I really don’t bother with that “nonsense” it’s just a carrot, why bother. Some folks say it removes the bitter skin from the carrot. Well, like matching up socks, I don’t have time in life to peel carrots. Too much to do.
When you have all the vegetables cut add in the salt, olive oil, and red wine vinegar. Mix in once and serve away. Now that was simple.

Ingredients
Simple and Quick Vegetable Vinaigrette Salad
- 1 tomato
- 1/2 carrot
- 1/3 cucumber
- 1 tea spoon salt
- 1 table spoon olive oil
- 1 table spoon red wine vinegar
Instructions
- Cut cucumber into thin strips, place in bowl.
- Cut tomato into 6-8 wedges, place in bowl.
- Cut carrot into thin strip like the cucumber, place in bowl.
- Add in salt, oil and vinegar, mix once and serve.
Notes
Pay attention to the way to cut the vegetables to give the salad a unique texture when eating.
